Located in the heart of Central, Hong Kong, Mott 32 has introduced its newly-appointed executive chef Lee Man Sing, who has cooperated with culinary director Malcolm Wood to concoct a brand new a-la-carte menu which offers business travellers a new delicate take on Chinese cuisine.
The new extensive a-la-carte menu features traditional Chinese cuisine with a modern twist, such as apple wood roasted 42 days Peking duck, and barbecue pluma Iberico pork with yellow mountain honey. The new menu also showcases a number of chef Lee’s new creations, including wok fried Australian lobster with egg white and Yunnan ham; steamed fillet of leopard coral garoupa with sea salt and ginger; signature smoked black cod; and pomelo peel with bamboo pith and black mushroom in abalone sauce.
With over 35 years of Chinese culinary experience, chef Lee has also prepared a range of smaller dishes, in which he adds his own inimitable touches by highlighting the nuances of fresh and seasonal ingredients. Highlights include South Australian scallop and beetroot dumplings; hot and sour Iberico pork Shanghainese soup dumplings; and crispy pomelo peel with sesame. www.mott32.com
